What this site is

Hone & Handle covers one thing: stepping up from a block set to Japanese knives, and learning to keep them sharp.

That means gyuto against santoku against nakiri, a first whetstone and the angle to hold it at, and an honest account of which sharpeners will chew a good edge. It is written for someone who already owns the entry gear, knows the vocabulary, and is fixing one specific weakness — not for someone buying their first knife ever.

Everything on this site is written by Michael W. — the hands-on owner behind the first buyer. One byline, every page.

That is the whole of it, and we are deliberately not going to pad it. Plenty of sites in this category claim testing protocols and credentials that cannot be checked — one page-one competitor for "best gyuto knife" claims eight months, 200-plus meals and 50 pounds of onions, with no way for anyone to verify a word of it. We would rather tell you exactly what we know and how we know it.

What that means in practice: where a knife or a stone has been used first-hand, the page says so. Where it has not, the page says that too, and explains what the recommendation is based on instead — published manufacturer specifications, retailer listings, the weight of professional and owner reviews across multiple retailers, and genuine hands-on experience sharpening and cooking with knives of the type.
